As a Canadian living in Ankara, I often go to Cappadocia for a weekend. There are so many nice pensions and hotels there that's it's hard to choose. I tried lots of them, and I liked most of them. But my favorite one is the new Assiana House in Urgup. It openned this spring. It's a tiny (for now; the owner, Mevlut bey, have enlargement projects!) classy cave hotel with only 5 rooms.
I really think it is worth to be discover: the rooms are absolutely beautiful, the owner and his family are charming people and the rate of the room is very reasonable for what you get.
