I may have bragged on this resource here before and if so I apologize for a repeat post. Classical Turkish Cooking: Traditional Turkish Food for the American Kitchen by Ayla Algar is positively one of the best Turkish cookbooks you will find. Those who post and read here frequnetly know my quest for Turkish food is a restless, endless one. Any time I can find a cookbook that can help me out it is good news. Over the years I have tried and mastered some classic Turkish food. However, some of these have eluded me one being a great recipe for Turkish Pide dough. Algar's book provides an excellent recipe for pide dough that can also be used as dough for pita bread as we know it over here in the states. So you can make either "Turkish pizza" or make pita for your hummus dip. Either result is fantastic.

I agree with Tavsan. I'm Turkish-American, live in California and we use Ayla Algar's cookbooks all the time. We have found that her recipes fit our tastebuds the best -very authentic and classical. She has 2 books (don't remember the titles) and both are good, essentially the same recipes, maybe one of them is more expansive, not sure. Another good one is Neset Eren's. She used to be the wife of the ambassador to the US. I don't know if her book is still in print.

I have a thread posted about Red Lentil Soup and a recipe that comes from Eren's book and I just went and looked at that thread and realized I also sang the praises of Algar's book there too. Ooops on the double post but I think they are the two best Turkish cooks out there right now. I think Eren's book may be out of print but if so somebody needs to run another pressing of it. I believe these two cookbook authors just may be the Godmothers of Turkish cooking.
Turkish cooking can be difficult at times in getting just the right taste and quality that Turkish cooks can pull off but these two books have never failed. The only cooking better than these recipes is that of my mother-in-law and my grandmother-in-law. Bubanne cooks old school Istanbul cuisine and mom-in-law is pretty good across the board.
I would be curious if anyone else out there has Turkish cookbooks they have used and liked.

Hello all,
as I am cooking Turkish food as my profession I am always looking for new recipes and more books. I look in Istanbul and during my trip to Holland.
Ayse Tüter has good books, I like her "Modern Türk Mutfak" very much, only in Turkish I am afraid.
Another book that I found recently is originally Australian published and called 'The Essential Mediterranean Cookbook' by Murdoch Books, it has not only Turkish recipes, also Greek (very similar) Italian, Spanish etc.
The cerkez tavugu I found in this one is superb!
